Minestrone Soup - 124 calories per cup

  Minestrone Soup:


    In a stock pot, heat stock just to a boiling (do not boil);
    Add onion, celery, garlic and leek.
    Reduce heat to simmer;
    Cook 1 hour.
    Add tomatoes, basil, oregano and pepper;
    Simmer 30 minutes.
    Return stock just to boiling.
    Add cabbage, zucchini and cattots;
    Reduce heat and simmer 20 minutes.
    Add remaining ingredients and heat.
    * use low sodium canned tomatoes and kidney beans.
