Slow Cooker:
The recipes that I have here came from a booklet that Costco's slow cooker came with.
I've had three of those slow cookers and they are all garbage.
The last Slow Cooker was a gift from my daughter and I was so careful with it, but the stoneware insert still broke.
Now I have "Nesco" smart canner. It also slow cooks.
1 Pot Slow Cooker Family Meals:
Baby Back Ribs:
- 2-4 racks of baby ribs, cut into 3-4 pieces each
- 2-4 cups barbecue sauce
- 2-3 onions chopped
Directions:
- Place ribs in Crock-Pot slow cooker. Top with onions and barbecue sauce.
- Cover and cook on LOW for 7-9 hours - or on HIGH 4-5 hours, or until meat is tender.
- To serve, cut ribs between bones and coat with extra sauce.
- Serves: 6-10
BBQ Pulled Pork:
- 2-1/2 to 5 pound pork loin, trimmed of fat
- 2-4 cups barbecue sauce
- 2-3 onions chopped
- 6-8 hamburger buns or hard rolls
Directions:
- Place pork loin in Crock-Pot slow cooker. Top with onions and barbecue sauce.
- Cover and cook on LOW for 7-9 hours - or on HIGH 4-5 hours, or until meat is tender.
- Remove pork Loin from slow cooker and shred with a fork. Add pork into slow cooker and coat with extra sauce.
- Serve BBQ pulled pork on buns.
- Serves: 6-8
Beef Bourguignon:
- 3 tablespoons flour
- salt and pepper
- 3 pounds beef chuck, cut-inch cubes
- 3 large carrots, peeled and sliced
- 1 medium onion, sliced
- 6 strips cooked bacon, cut into 1-2 inch pieces
- 1 - 10-ounce can beef broth
- 2 cups red or Burgundy wine
- 1 tablespoon tomato paste
- 2 cloves garlic, minced
- 1 bay leaf
- 1 pound fresh mushrooms, sliced
- 2 large potatoes, cut into 1-inch pieces
Directions:
- Coat beef in flour seasoned with salt and pepper. Sear beef in a skillet on stovetop.
- Place meat in slow cooker and add remaining ingredients.
- Cover and cook on LOW for 8-10 hours - or on HIGH for 5-7 hours until meat is tender.
- Serves: 6-8
Lemon Herb Roasted Chicken:
- 4-6 pound roasting chicken
- 1/2 cup onion, chopped
- 1-2 tablespoons butter
- juice of 1 lemon
- 1/2 teaspoon salt
- 2 tablespoons fresh parsley
- 1/2 teaspoon dried thyme
- 1/3 teaspoon paprika
Directions:
- Place the onion in the cavity of the chicken and rub the skin with butter. Place chicken in slow cooker.
- Squeeze lemon juice over chicken and sprinkle with remaining seasonings.
Cover and cook on LOW 8-10 hours or on HIGH 4-5 hours.
- Serves: 4-6
Chicken Cacciatore:
- 2-3 onions, thinly sliced
- 2-4 pounds chicken, skinned (breasts or thighs
- 1 - 28 ounce can plum tomatoes, chopped
- 1/2 cup dry white wine or broth
- salt and pepper
- 5 cloves garlic, minced
- 2 tablespoons capers
- 20 pitted Kalamata olives, copped coarsely
- 1 bunch fresh parsley or basil, stemmed and coarsely chopped
- cooked pasta
Directions:
- Place sliced onion in slow cooker and cover with chicken.
- In bowl, stir tomatoes, salt, pepper, garlic and white wine together. Pour over chicken.
- Cover and cook on LOW 5-6 hours or on HIGH for 3-4 hours or until chickem is tender.
- Stir in capers, olives and herbs just before serving.
- Serve over cooked pasta.
- Serves: 4-8
Chili:
- 2 large onions, chopped
- 5-6 cloves garlic, minced
- 2 green peppers, chopped
- 2-3 pounds ground beef, cooked and drained
- 2 - 14-ounce cans red, black or white beans, rinsed and drained
- 1 - 14-ounce can diced tomatoes
- 2 jalapenos, seeded and minced
- 1 tablespoon cumin
- 1 teaspoon cayenne pepper
- 1/2 cup beef broth
Directions:
- Add all ingredients to slow cooker.
- Cover and cook on LOW for 8-9 hours or on HIGH for 4-5 hours.
- Serves: 6-8
Pot Roast:
- 2-4 pound beef chuck pot roast
- 1/2 cup flour
- sat and pepper
- 3 carrots, sliced
- 3 potatoes, quartered
- 3 onions, sliced
- 2 stalks celery, sliced
- 1 cup mushrooms, sliced
- 1 cup beef broth or wine
Directions:
- Coat roast with flour, salt and pepper. Sear roast in a skillet on stove top.
- Place all vegetables in slow cooker, except mushrooms. Add roast and spread mushrooms on top. Pour in liquid.
- Cover and cook on LOW for 10-12 hours or on HIGH for 6-8 hours or until tender.
- Serves: 6-10
Beef Stew:
- 2-4 pounds beef chuck stew meat, cut into 1-inch cubes
- 1/2 cup flour
- salt and pepper
- 3 cups beef broth
- 1 tablespoon Worcestershire sauce
- 3 cloves garlic, minced
- 2 bay leaves
- 6 small potatoes, quartered
- 2-3 onions, chopped
- 3 celery stalks, sliced
Directions:
- Sprinkle flour, salt and pepper over meat. Place meat in slow cooker.
- Add remaining ingredients and stir well.
- Cover and cook on LOW for 8-10 hours or on HIGH for 5-6 hours or until meat is tender. Stir thoroughly before serving.
- Serves:6-8
Easy, Healthy Fish Filet:
- Salt and Pepper
- 2-3 pounds of white fish (cod, sea bass, tilapia or catfish) skinned
- fresh herbs (parsley, basil, tarragon, savory)
- 2-3 lemons, thinly sliced
- prepared salsa or olive tapenade to garnish
Directions:
- Salt and Pepper both sides of the fish and place on slow cooker. Cover top of fish with herbs and lemon slices and tuck some under fish.
- Cover and cook on HIGH for 30-40 minutes or until no longer translucent. Cook times very depending on the thickness of the fish.
- Remove lemon slices and top with salsa or tapenade.
- Serves: 4-6
Check for "doneness".
My last roast was a little too well done for me. :)
