Preheat oven:
Set your oven to 200°F and line a baking sheet with parchment paper.
Whip egg whites: In a clean, dry bowl, beat the egg whites on medium speed.
Add the cream of tartar to help stabilize the egg whites (optional).
Add sugar gradually:
Once the egg whites form soft peaks, start adding the sugar gradually.
Continue to beat until stiff peaks form and the meringue looks glossy.
Shape the suspiros: Spoon the meringue onto the prepared baking sheet in small rounds and forming a point like a (chocolate kiss shape) .
Bake: Bake for about 1 hour, or until the suspiros are firm and dry to the touch.
Makes:
Large Suspiros: kiss-shaped, the recipe might yield around 18-24 cookies.
