Chicken Stir-Fry with Pie Filling

Ingredients:
- 1 ea medium onion coarsely chopped
- 2 c cooked chicken or pork
- cut into cubes
- 1/2 c thinly sliced carrots
- 19 oz 1 can can of Apple Pie filling
- 2 tbsp vegetable oil
- 3 tbsp of soy sauce
- 1 ea medium green pepper
- cut into strips
Instructions:
Saute onion and carrot slices in oil until onion is tender.
Add green pepper, chicken or pork cubes, apple pie filling and soy sauce to taste. Simmer, covered for about 10 minutes. Serve over hot cooked rice. Makes 4 servings.

What I do is I cube enough chicken to feed my family. Cook the chicken with onions and soy sauce until the chicken is done.
Add whatever vegetables I have or buy frozen stir-fry veggies. Don't over cook the veggies. At the last minute add the apple pie filling and simmer until warm all through. Great as a left-over. Microwaves beautifully.
