Chicken Stir-Fry

Ingredients:
- 2 chicken breasts
- thinly sliced
- 1 red bell pepper
- julienned
- 1 yellow bell pepper
- julienned
- 1 cup broccoli florets
- 1 medium carrot
- thinly sliced
- 1 onion
- sliced
- 2 cloves garlic
- minced
- 1-inch piece of ginger
- minced
- 3 tbsp soy sauce
- 1 tbsp oyster sauce (optional)
- 1 tbsp hoisin sauce
- 1 tbsp sesame oil (or vegetable oil)
- 1 tbsp olive oil (for cooking)
- 1 tsp cornstarch mixed with 1 tbsp water
- Salt and pepper to taste
- Sesame seeds for garnish (optional)
- Green onions for garnish (optional)
Instructions:
Prep Ingredients: Slice the chicken, bell peppers, onion, and carrot. Mince the garlic and ginger.
Cook Chicken: Heat the olive oil in a large pan over medium-high heat. Add the chicken slices and cook until browned (about 5-7 minutes). Remove from the pan and set aside.
Sauté Veggies: In the same pan, add sesame oil. Toss in the garlic and ginger, stir-fry for 30 seconds, then add the broccoli, bell peppers, carrot, and onion. Stir-fry for 3-5 minutes until tender-crisp.
Combine: Return the chicken to the pan. Add soy sauce, oyster sauce, hoisin sauce, salt, and pepper. Stir everything together.
Thicken Sauce: Add the cornstarch slurry (cornstarch mixed with water) and cook for another 1-2 minutes until the sauce thickens slightly.
Serve: Garnish with sesame seeds and green onions, and serve over rice or noodles!
