Hearty Beef Chilli

Ingredients:
- 1 lb ground beef (or a mix of beef and pork for extra flavor)
- 1 onion
- diced
- 2 cloves garlic
- minced
- 1 bell pepper
- chopped
- 1 jalapeño
- finely chopped (optional for heat)
- 1 can (14 oz) diced tomatoes
- 1 can (15 oz) kidney beans
- drained and rinsed
- 1 can (15 oz) black beans
- drained and rinsed
- 1 can (6 oz) tomato paste
- 1 cup beef broth (or water)
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 tsp oregano
- Salt and pepper to taste
- 1 tbsp olive oil
- Optional toppings: sour cream
- shredded cheese
- cilantro
- lime wedges
Instructions:
Cook Ground Beef: In a large pot, heat the olive oil over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks.
Sauté Veggies: Add the onion, garlic, bell pepper, and jalapeño to the pot. Cook for about 5-7 minutes until softened.
Add Spices: Stir in the chili powder, cumin, smoked paprika, oregano, salt, and pepper. Let it cook for about 1 minute to let the spices bloom.
Simmer: Add the diced tomatoes, tomato paste, beans, and beef broth. Stir well and bring the mixture to a simmer. Reduce heat to low and let it cook for 30-45 minutes, stirring occasionally, until it thickens.
Serve: Ladle the chili into bowls and top with sour cream, shredded cheese, cilantro, and a squeeze of lime if desired.
