Pumpkin and Apple Cake

Ingredients:
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1/4 tsp salt
- 1/2 cup butter
- softened
- 1 cup sugar
- 1 cup canned pumpkin puree
- 2 large eggs
- 1 tsp vanilla extract
- 1 large apple
- peeled
- cored
- and chopped into small pieces
- 1/2 cup chopped walnuts (optional)
Instructions:
Preheat oven: Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking dish.
Mix Dry Ingredients: In a bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
Cream Butter & Sugar: In another large bowl, beat the butter and sugar until light and fluffy. Add the pumpkin puree, eggs, and vanilla extract, and mix until combined.
Add Dry Ingredients: Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Add Apples & Nuts: Gently fold in the chopped apple and walnuts (if using).
Bake: Pour the batter into the prepared baking dish and bake for 30-40 minutes, or until a toothpick comes out clean.
Serve: Let it cool before serving. You can dust with powdered sugar or drizzle with a glaze for extra flair.
