Banana Bread

Ingredients:
- 2-3 ripe bananas
- mashed
- 1/3 cup melted butter
- 1 tsp baking soda
- Pinch of salt
- 3/4 cup granulated sugar (can reduce to 1/2 cup for less sweetness)
- 1 large egg
- beaten
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 tsp ground cinnamon (optional)
Instructions:
Preheat oven: Preheat your oven to 350°F (175°C). Grease a loaf pan.
Mix Wet Ingredients: In a large bowl, mash the bananas with a fork until smooth. Stir in the melted butter, then add the baking soda, salt, sugar, beaten egg, and vanilla extract. Mix well.
Add Dry Ingredients: Stir in the flour and cinnamon (if using) until just combined. The batter will be a bit thick.
Bake: Pour the batter into the loaf pan and bake for 60-65 minutes, or until a toothpick comes out clean. Let it cool in the pan for 10 minutes before transferring it to a wire rack.
Serve: Slice and enjoy with a hot cup of coffee or tea!
Note: I bake this bread in two round cake pans.
Add banana slices between the two round cakes and cover the round cake with a thin coat of frosting.
