Zucchini Bread with Raisins

Ingredients:
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 2 large eggs
- 1/2 cup vegetable oil (or melted butter)
- 1 1/2 cups granulated sugar
- 2 tsp vanilla extract
- 2 cups grated zucchini (about 2 medium zucchinis)
- 1 cup raisins (or a mix of raisins and nuts)
Instructions:
Preheat oven: Preheat your oven to 350°F (175°C) and grease a loaf pan.
Mix Dry Ingredients: In a bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
Mix Wet Ingredients: In another large bowl, beat the eggs with the oil (or melted butter), sugar, and vanilla extract until smooth. Add the grated zucchini and mix well.
Combine: Gradually fold in the dry ingredients until just combined. Gently fold in the raisins (and nuts if using).
Bake: Pour the batter into the loaf pan and bake for 55-60 minutes, or until a toothpick comes out clean. Let it cool in the pan for 10 minutes before transferring to a wire rack.
Serve: Slice and enjoy with a dollop of butter or just plain—it’s delicious either way!
Bonus Tips:
For an extra moist cake or bread, add unsweetened applesauce (1/4 cup) to your recipes.
For spicy depth, add a little freshly grated ginger or a pinch of cloves to the mix.
