Peel and slice the onion, cutting off the top (but leave the root intact). Slice it into wedges but don't cut all the way through — you want it to stay together.
In a bowl, whisk together flour, paprika, garlic powder, cayenne pepper, salt, and pepper.
In another bowl, whisk the egg and buttermilk.
Dip the onion into the buttermilk mixture, ensuring it’s fully coated. Then dip it into the flour mixture, coating it evenly. For extra crispiness, dip again in the buttermilk and flour mixture.
Heat oil in a deep fryer or large pot to 375°F (190°C). Fry the onion in batches for 3-4 minutes until golden brown and crispy.
While the onion is frying, mix together the dipping sauce ingredients.
Let the onion cool slightly, then serve with dipping sauce!
