      Title: Zucchini Bread

      Yield: 1 Loaf



      3 ea eggs

      1 c  vegetable oil

      4 ea small zucchini peeled-seeded and diced

      2 ts vanilla

      2 c  sugar

  3 1/2 c  flour

      1 c  raisins or nuts

      1 ts salt

      1 ts baking soda

      1 ts baking powder

      1 ts nutmeg

      1 ts cinnamon



1) Mix eggs, oil, zucchini, vanilla and sugar in a blender. 

2)  Pour in a large bowl and mix in the flour, raisins, salt, baking soda, baking powder, nutmeg and cinnamon. 

3)  Blend well. 

4) Grease Pan. 

5) Bake at: 325° for about 1 hour.
