Ingredients
- 4-5 lb pot roast
- 1 tbs flour
- 1tsp salt
- 1/2 tsp pepper
- 1 1/2 tsp crumbled herbs, marjoram, basil thyme
- suet
- 2 onions sliced thin
- 1 carrot per person, sliced
- 1 stalk celery , sliced
- 1/2 cup peas or cut-up green beans
- 1/2 green pepper, sliced
- 1 cup of raw brown rice
- 2 cups of boiling water or bouillon

Directions
Mix flour, salt, pepper, and 1 teaspoon of herbs;
rub thoroughly into cut surfaces and sides of meat. Heat suet in frying pan and sear meat all over, turning it carefully so you don't let out the juices.
Spread vegetables in a deep roasting pan and top with rice mixed with remaining herbs.
Pour boiling liquid and place roast on top, settling it into rice so the lid will fit tightly. Cover.
Bake at : 350° for 2-4 hours.
