Mother Nature was good to me this year. Lots of tomatoes for sauce.
I wanted to make tomato sauce as a base for a lot of other meals during the winter like:
stews, soups, pizza, chilli, pasta sauce etc.
I only use Roma tomatoes. I'm sure there are a whole bunch of other sauce tomatoes out there, but that's all I have, at least for now.
Tomato Sauce looks so pretty on the shelf in canning jars. It's looks so pretty that I'm tempted to go and buy some instead of using my own. :)

This is how I did mine.
- I washed my Roma tomatoes.
- Scored the tomatoes, just on the skin with a sharp knife. I just made one long cut.
- Blanched the tomatoes in hot water until I saw the skin shrivel or pull apart from the pulp.
- Removed tomatoes from the hot water onto a colander and ran cold water over the hot tomatoes to stop the cooking process. You could use ice water. Cold water from the tap was easier.
- Peeled and cored the tomatoes, seeded the tomatoes over a collander over a bowl and saved the juice. Discarded the seeds. Some of the seeds did get in the sauce but that's "ok" told my kids that the seeds makes it look realistic. : )
- Added the juice and the tomatoes to the sauce pot.
- Cooked the tomatoes and reduced the sauce to the consistency of choice.

I used a hand held blender to puree the tomatoes while cooking, but you could also put all of your tomatoes on a food blender and pulse it for a few seconds and then cook them. This will cut down on cooking time as well. I think I will try that next time. That's it! :)
